Have you ever wondered how to grill that ribeye or porkchop so it is a great eating experience? Do you shy away from that cut of meat because it is expensive, and you do not want to ruin it? Does it look like a sea of red when you look at the meat and seafood counter and you are just overwhelmed about what to buy? Have you had a bad experience grilling fish or seafood? Do you worry that if you grill or cook it wrong, it will be impossible to correct? Do you wonder if every cut can go on a grill? Talking to the butcher will help you answer all these questions.

Meat, poultry and seafood are very tasty, satisfying and have amazing mouthwatering flavor. What is it about meat in general that causes the joy we feel the moment we bite into it? Part of the answer has to do with one funny sounding word: umami. What is umami? This savory like flavor is oftentimes called the fifth taste, alongside sweet, sour, bitter & salty. Most of us just call it delicious.

Our speaker this month is Charlie Cory, the owner of Big Steer Meats in St. Paul. Charlie’s dad bought the meat market in 1978 and Charlie has been working there ever since. Cutting meat has been ingrained in him since he started working at the meat market when he was 12. He and his dad worked together for 22 years at the meat market. Their number one selling beef item is the Al Capone steak, a ribeye split in half and stuffed with capicola provolone cheese, green olives, hard salami and porketta seasoning.
