Serving it Allergy Free

Have you noticed that more people around you seem to be avoiding eating some food or foods? Food allergies and intolerances (sensitivities) are all around us these days – in fact 1 in 3 people claim to be “allergic” to something in the food supply. What is real and what is “made up”? Our speaker (and FCS Professional member) Debra Zwiefelhofer who is a registered dietitian will cover pertinent information about the top eight allergens along with one common food intolerance, gluten. Allergies and intolerances will be defined. Food labeling as it relates to identifying allergens laws will be explained. Finally, key points for handling allergens within any home kitchen or foodservice operation will be reviewed.

Debra is a registered and licensed dietitian who has worked in a variety of positions in healthcare and industry businesses. She is a graduate of UW-Stout where she earned her bachelor degree in Dietetics and Food Service Administration with a minor in Business. She completed her dietetic internship at Henry For Hospital in Detroit, MI. Prior to starting her own consulting business in 2010 she had worked for 17 years in medical marketing in the nutrition division of a major pharmaceutical company. Earlier in her career she worked in healthcare in clinical and food service management positions in a variety of patient care settings. Debra is a member of the Academy of Nutrition and Dietetics along with a number of national and local professional organizations; writes nutrition related articles for various journals and regularly speaks and lectures on various nutrition topics.

This program will be a Webinar – you will need computer and/or phone access. Slide handouts will be emailed in advance so you may choose to listen in only. You should be able to get the audio through your computer but that does not always work so it is advisable to have access to a phone (charges will apply if you do not have free long distance as part of your phone plan).
